Gimbap — Korean seaweed rice rolls
Rice and cooked fillings rolled in seaweed for a Korean-style meal.
Ingredients
How to cook
- Cut the beef into thin strips, season with soy sauce, garlic and sugar, then cook thoroughly. Julienne the carrot and stir-fry separately.
- Wash and blanch the spinach and squeeze dry. Beat eggs with part of the salt, cook into a fully set thin omelet and cut into strips.
- Mix rice with the remaining salt and sesame oil and let excess steam escape. Spread rice thinly on each seaweed sheet, leaving a strip uncovered.
- Place beef, carrot, spinach, egg and pickled radish in the center and roll firmly. Rest seam-side down, slice and eat promptly. Refrigerate leftovers promptly.

Local ingredient swaps
Use these options when the original ingredient is unavailable. Flavor and texture will change; these swaps have not been tested in our kitchen.
| Korean ingredient | Local option | How to use it | What changes |
|---|---|---|---|
| Gimbap gim | Plain full-size sushi nori sheets | Use the same number of sheets. | Small seasoned snack seaweed sheets are usually too fragile and small for rolls. |
| Danmuji | Cucumber strips, as a fresh adaptation | Use four roll-length strips, pat dry and keep chilled until rolling. | You lose the sweet-sour pickled flavor and yellow color. |
| Short-grain cooked rice | Sushi rice or another plain short-grain rice | Cook according to the packet; use the cooked quantity in the recipe. | Long-grain rice is less sticky; it is less suitable for tightly rolled gimbap. |
Ingredients and allergies
Check product labels: soy sauce can contain wheat, kimchi and fish cakes can contain seafood, and miso or tofu contains soy. Ingredient swaps do not automatically make a dish gluten-free, vegetarian or allergy-safe.
