Spinach
Spinach in Korean cooking: nutrition, preparation and storage.

Nutrition and everyday use
Spinach supplies folate and vitamin K. Folate supports normal cell division; vitamin K is needed for normal blood clotting. These nutrient functions do not mean spinach treats disease.
Choosing and preparing
Choose leaves that are not wilted and avoid damaged roots. Rinse away soil carefully, then blanch the stems before the leaves.

Storage and cooking
Squeeze excess water from blanched spinach and divide into portions. Use it in bibimbap and japchae. If you take warfarin, discuss major changes in vitamin K intake with your healthcare professional.
