Carrot
Carrots: beta-carotene, preparation and everyday cooking.

Nutrition and everyday use
Carrots provide beta-carotene, which the body can convert into vitamin A. Vitamin A supports normal vision and immune function. Eating extra carrots does not automatically improve eyesight when intake is already adequate.
Choosing and preparing
Choose firm carrots without soft spots or deep cracks. Wash them and cut into even pieces so they cook at a similar rate.

Storage and cooking
Remove attached leaves and refrigerate the carrots. Use thin strips in bibimbap or japchae. Food portions and high-dose beta-carotene supplements are not interchangeable.
