Dubu jorim — braised tofu

Pan-seared tofu gently simmered in a garlic and chili sauce.

25 min · 2 servings

Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Slice the tofu 1 cm thick and pat dry with a paper towel.
  2. Heat oil over medium heat and sear the tofu for 3 minutes on each side.
  3. Mix soy sauce, water, gochugaru, garlic, sugar and sliced green onion and pour over the tofu.
  4. Simmer over low heat for 7 minutes, spooning the sauce over the slices.

Firm Korean tofuPlain firm tofu from the refrigerated aisleUse the same weight and pat dry before pan-searing.Silken tofu is too fragile for the same searing method.
GochugaruPlain sweet paprika plus an optional pinch of cayenneUse paprika for color and add cayenne cautiously to the cooked sauce. It lacks gochugaru’s flavor and texture. Do not use a chili seasoning blend containing cumin or salt.
Korean regular soy sauceRegular, unsweetened soy sauceStart with about three quarters of the listed amount and adjust after cooking.Saltiness varies. Sweet soy sauce and thick dark soy sauce change the result.
Ingredients and allergies

Check product labels: soy sauce can contain wheat, kimchi and fish cakes can contain seafood, and miso or tofu contains soy. Ingredient swaps do not automatically make a dish gluten-free, vegetarian or allergy-safe.
