How to use this guide

Use a little unsalted sweet paprika for color, then adjust any chili separately. In Mexico, distinguish pure ground chile from blends containing salt, cumin or other seasonings.

What changes and what to check

Expect a different aroma and flake size. This is a cooked-dish adjustment, not a validated kimchi fermentation formula. Vinegary hot sauce is not a dry spice substitute.
