Local ingredient swaps
Use these options when the original ingredient is unavailable. Flavor and texture will change; these swaps have not been tested in our kitchen.
| Korean ingredient | Local option | How to use it | What changes |
|---|---|---|---|
| Pear juice for bulgogi | Unsweetened apple juice | Use the listed juice volume as a starting point and check the sweetness of the cooked sauce. | The fruit aroma changes. This is an untested editorial adaptation, not an identical pear substitute. |
| Enoki mushrooms | Thinly sliced button mushrooms | Use the same weight and cook thoroughly. | Button mushrooms are meatier and less delicate. |
| Korean regular soy sauce | Regular, unsweetened soy sauce | Start with about three quarters of the listed amount and adjust after cooking. | Saltiness varies. Sweet soy sauce and thick dark soy sauce change the result. |
Ingredients and allergies
Check product labels: soy sauce can contain wheat, kimchi and fish cakes can contain seafood, and miso or tofu contains soy. Ingredient swaps do not automatically make a dish gluten-free, vegetarian or allergy-safe.
