Jjimdak — soy-braised chicken

Bone-in chicken braised with potatoes, vegetables and glass noodles.

50 min · 2 servings

Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Trim excess chicken fat and cut the vegetables into large pieces.
  2. Place chicken, water, soy sauce, sugar and garlic in a pot and simmer for 15 minutes.
  3. Add potato, carrot and onion and cook over medium heat for another 15 minutes.
  4. Add the soaked noodles and green onion. Simmer for 5 minutes and check that the chicken center reaches 74°C.

Korean green onionScallions / spring onionsUse the listed weight; add pale stalks before delicate green tops.Thin scallions cook faster than thick Korean green onions.
Ingredients and allergies

Check product labels: soy sauce can contain wheat, kimchi and fish cakes can contain seafood, and miso or tofu contains soy. Ingredient swaps do not automatically make a dish gluten-free, vegetarian or allergy-safe.
