Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Cut the chicken into bite-sized pieces. Mix with gochujang, gochugaru, soy sauce, sugar and garlic; refrigerate for 15 minutes.
  2. Cut the cabbage into large pieces and the sweet potato into 5 mm slices.
  3. Heat the oil and stir-fry the chicken for 5 minutes. Add vegetables, rice cakes and water; cover and cook for 10 minutes.
  4. Uncover and stir-fry for 3 minutes to reduce the sauce. Check the chicken center reaches at least 74°C.

GochujangLook for Korean gochujang in an Asian grocery or onlineBuy the original paste for the closest result; start with less if reducing heat.Sriracha, ketchup and Mexican chili pastes are not direct substitutes for fermented gochujang.
Tteokbokki rice cakesKorean refrigerated or frozen rice cakesFollow the package soaking or thawing directions. Use a Korean/Asian grocery or an online seller. There is no close ordinary-pasta substitute for the chewy rice-cake texture.
GochugaruPlain sweet paprika plus an optional pinch of cayenneUse paprika for color and add cayenne cautiously to the cooked sauce. It lacks gochugaru’s flavor and texture. Do not use a chili seasoning blend containing cumin or salt.
Ingredients and allergies

Check product labels: soy sauce can contain wheat, kimchi and fish cakes can contain seafood, and miso or tofu contains soy. Ingredient swaps do not automatically make a dish gluten-free, vegetarian or allergy-safe.
