Samgyetang — ginseng chicken soup

Small whole chickens filled with glutinous rice, ginseng, garlic and jujube.

85 min · 2 servings

Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Wash the rice, soak for 30 minutes and drain. Check cleaned chickens for remaining giblets; keep raw-poultry tools separate.
  2. Loosely fill each chicken with rice, washed ginseng, garlic and jujubes. Leave room for the rice to expand.
  3. Place chicken and water in a pot and bring to a boil. Lower the heat and simmer with the lid slightly ajar for 50–60 minutes, adding water if needed.
  4. Check that both the thickest chicken meat and the center of the rice stuffing reach at least 74°C. When the rice is tender, add green onion and season individual servings with salt.
