Kimchijeon — kimchi pancakes

Thin, savory pancakes made with chopped kimchi and its brine.

25 min · 2 servings

Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Chop the kimchi into small pieces and thinly slice the green onion.
  2. Mix flour with water and kimchi brine, then add kimchi and green onion. Add a little more water if the batter is too thick.
  3. Heat half the oil and spread half the batter thinly. Cook over medium heat for 3–4 minutes until the bottom is set and the edges crisp.
  4. Flip and cook for about 3 more minutes until no raw batter remains in the center. Repeat with the remaining oil and batter.
