Pajeon — scallion pancakes

Scallions cooked in a thin, savory Korean pancake batter.

25 min · 2 servings

Ingredients

1 tablespoon = 15 ml; 1 teaspoon = 5 ml. A bowl of rice is a serving measure, not a standardized cup.

How to cook

  1. Trim the scallions, wash and cut to fit your pan.
  2. Mix flour, water, doenjang and sugar into a thin batter.
  3. Spread scallions in an oiled pan, pour batter into the gaps and cook over medium-low heat until the base is firm.
  4. Flip with a broad spatula and cook 3–4 minutes more. Check that the center batter and thick scallion stems are fully cooked.
