How to use this guide

Use scallions or cebollín, cooking the white part earlier and adding greens near the finish. Match the chopped amount and desired aroma rather than the number of stalks.

What changes and what to check

Leeks may be thicker and need longer cooking. Garlic chives have a different shape and flavor and are not identical to green onions.
